Shrimp Salad
Ingredients
for 4 persons
- 1 box of Marie Thumas Groovy Greens
- 450 g tiger shrimps
- 20 g roasted pecans
- 1/2 lime
- 2 spring onions
- 3 sprigs of coriander
- 1 tsp sambal oelek
- 1/2 tsp cayenne pepper
- 2 tbsp olive oil
Preparation
- Thaw and peel the tiger shrimp. Heat olive oil in a pan and cook the shrimp over high heat. Season with cayenne pepper and some lime zest and juice.
- Sauté the Groovy Greens mix for 4 to 6 minutes in a non-stick pan over medium heat.
- Add sambal oelek to your liking and mix well.
- Combine the tiger shrimp with the Groovy Greens mix and arrange everything in a dish. Garnish with finely chopped spring onions, a few sprigs of coriander, and the roasted pecans.
