Shrimp Salad

Ingredients

for 4 persons
  • 1 box of Marie Thumas Groovy Greens
  • 450 g tiger shrimps
  • 20 g roasted pecans
  • 1/2 lime
  • 2 spring onions
  • 3 sprigs of coriander
  • 1 tsp sambal oelek
  • 1/2 tsp cayenne pepper
  • 2 tbsp olive oil

Preparation

  1. Thaw and peel the tiger shrimp. Heat olive oil in a pan and cook the shrimp over high heat. Season with cayenne pepper and some lime zest and juice.
  2. Sauté the Groovy Greens mix for 4 to 6 minutes in a non-stick pan over medium heat.
  3. Add sambal oelek to your liking and mix well.
  4. Combine the tiger shrimp with the Groovy Greens mix and arrange everything in a dish. Garnish with finely chopped spring onions, a few sprigs of coriander, and the roasted pecans.
