Venison stew in red wine sauce
Ingredients
for 8 persons
Groovy Greens salad:
- 2 boxes of of Marie Thumas Groovy Greens
- cherry tomatoes
- mini mozzarella balls
- pine nuts
Venison Stew:
- 2 kg venison stew meat
- 1 liter red wine
- 2 onions
- 2 carrots
- 1 stalk celery
- 1 clove garlic
- 2 tablespoons flour
- 300 ml brown stock
- Thyme
- Bay
- leaf of bread
- Mustard
Preparation
Groovy Greens salad:
- Heat the Marie Thumas Groovy Greens as indicated on the packaging.
- Arrange them in a wreath on a large bowl and finish with cherry tomatoes, mini mozzarella balls, and pine nuts
Venison Stew:
- Sauté the onions, carrots, and celery with the garlic in some butter. Remove and set aside.
- Season the meat with salt and pepper and brown the venison in butter. Add the flour and cook briefly.
- Add the vegetables back in and deglaze with the red wine, stock, thyme, and bay leaf.
- Spread mustard on the slice of bread and let the whole dish simmer gently for 2 hours and 15 minutes over low heat.
- Season with salt and pepper. Optionally, add some cranberry jam at the end.
