Rack of Lamb with Fiesta Mediterranea
Ingredients
for 8 persons
- 2 boxes of Marie Thumas Fiesta Mediterranea
- 4 lamb racks
- 2 cloves of garlic
- 1 bunch of fresh rosemary
- 400 ml brown stock
- 200 ml white wine
- 1 onion
Preparation
- Finely chop the onion and sauté.Add a crushed clove of garlic and the rosemary, then deglaze with the white wine. Let it reduce completely and add the stock. Allow to simmer gently for 20 minutes and season with salt and pepper.
- Season the lamb with salt and pepper and sear the racks in some butter with a clove of garlic until golden brown all around. Preheat the oven to 180°C and roast for 7–8 minutes. Let rest for the same amount of time under aluminum foil.
- Prepare the Marie Thumas Fiesta Mediterranea as indicated on the packaging.
- Place the vegetables on a plate and arrange the sliced racks alongside. Pour over the rosemary sauce.
