Vegetable Frittata
Ingredients
for 4 persons
- 1 box of Marie Thumas Fiesta Mediterranea
- 5 eggs
- 3 tbsp fresh cream
- 20 g Parmesan cheese
- 2 tbsp olive oil
- 3 sprigs of oregano
- 3 sprigs of thyme
- salt and pepper
Preparation
- Preheat the oven to 200°C (392°F).
- Break the eggs into a bowl and season with salt and pepper. Add the cream and grated Parmesan.
- Sauté the Fiesta Mediterranea mix for 5 to 7 minutes in a non-stick pan over medium heat. Pour the egg mixture over the Fiesta Mediterranea mix, add the oregano and thyme leaves, and mix well.
- Bake the frittata for 30 minutes at 200°C.
- Remove the dish from the oven and let the frittata cool slightly before slicing.
- Serve with a fresh salad.
