Cauliflower rice with breaded chicken

Ingredients

for 4 persons
  • 1 box of Marie Thumas Cooli Power
  • 400 g chicken breasts
  • 40 g panko
  • 20 g fresh arugula
  • 20 g parmesan shavings
  • 2 tbsp olive oil
  • 2 tbsp chicken seasoning

Preparation

  1. Coat the chicken breasts in panko mixed with chicken seasoning, then cook them over medium heat in olive oil until golden brown on both sides.
  2. Meanwhile, sauté the Cooli Power mix for 3 to 4 minutes in a pan over medium heat.
  3. Serve the mix in a dish, slice the chicken, and arrange it on top. Finish with fresh arugula and Parmesan shavings.
