Cauliflower rice “risotto” with scallops and chorizo
Ingredients
for 4 persons
- 1 box of Marie Thumas Cooli Power
- 8 scallops (1 scallop per person for a small appetizer, 2 scallops per person for a starter)
- 32 small slices of chorizo
- 1 lime
- 200 ml yoghurt dressing
Preparation
- Slice the scallops into 4 slices each.
- Arrange one slice of scallop with one slice of chorizo and continue layering.
- Use 1 scallop per person for a small appetizer, 2 scallops per person for a starter.
- Grate some lime zest over the scallops. Season with salt and pepper and drizzle with yogurt dressing.
- Prepare the Cooli Power as indicated on the packaging and serve alongside the scallops.
