Cauliflower rice “risotto” with scallops and chorizo

Ingredients

for 4 persons
  • 1 box of Marie Thumas Cooli Power
  • 8 scallops (1 scallop per person for a small appetizer, 2 scallops per person for a starter)
  • 32 small slices of chorizo
  • 1 lime
  • 200 ml yoghurt dressing

Preparation

  1. Slice the scallops into 4 slices each.
  2. Arrange one slice of scallop with one slice of chorizo and continue layering.
  3. Use 1 scallop per person for a small appetizer, 2 scallops per person for a starter.
  4. Grate some lime zest over the scallops. Season with salt and pepper and drizzle with yogurt dressing.
  5. Prepare the Cooli Power as indicated on the packaging and serve alongside the scallops.
