Vegetable Frittata

Ingredients

for 4 persons
  • 1 box of Marie Thumas Fiesta Mediterranea
  • 5 eggs
  • 3 tbsp fresh cream
  • 20 g Parmesan cheese
  • 2 tbsp olive oil
  • 3 sprigs of oregano
  • 3 sprigs of thyme
  • salt and pepper

Preparation

  1. Preheat the oven to 200°C (392°F).
  2. Break the eggs into a bowl and season with salt and pepper. Add the cream and grated Parmesan.
  3. Sauté the Fiesta Mediterranea mix for 5 to 7 minutes in a non-stick pan over medium heat. Pour the egg mixture over the Fiesta Mediterranea mix, add the oregano and thyme leaves, and mix well.
  4. Bake the frittata for 30 minutes at 200°C.
  5. Remove the dish from the oven and let the frittata cool slightly before slicing.
  6. Serve with a fresh salad.
